Located in beautiful Midway, Utah - just minutes from Park City Zermatt Utah is seeking an experienced, qualified Executive Chef who will be responsible for overseeing the day-to-day culinary operations of: Z's Steak & Chop Haus and Wildfire Smokehaus, Banquets, Room Service and Z's Bakery.  This department head ensures the highest quality of food and service for our hotel and local guests. The Chef prepares an annual budget and achieves these financial goals throughout the year, through proper forecasting, cost controls and labor management. She/he coordinates the ordering and monitoring of all food and kitchen wares and the engineering of all menu items to maintain the proper contribution margin. The Chef is also responsible for hiring of all kitchen staff, their training and development through education and creative instruction.

Executive Chef Duties and Responsibilities

  • Coordinate and direct all food preparation, from prep through service
  • Monitor the quality of all food and beverages
  • Track, record, and maintain inventory stock including foods, beverages, and kitchen supplies
  • Delegate daily tasks to sous chef and other kitchen staff; manage their progress throughout the day
  • Oversee entire kitchen staff activity and ensure efficient work
  • Order and arrange pickup or delivery of foods for the week
  • Oversee repairs of kitchen appliances
  • Direct and design plating/presentation techniques for all dishes
  • Create new recipes and routinely update menu, including daily and weekly specials
  • Help determine pricing for menu items
  • Hire and train new kitchen staff
  • Work efficiently to resolve any problems that arise in the kitchen
  • Research and implement new culinary trends
  • Maintain a clean kitchen and abide by all state food safety and sanitation laws

Executive Chef Requirements and Qualifications

  • Strong and proven leadership
  • 2-year Culinary Arts degree and/or other culinary certification
  • Bachelor's degree preferred
  • 5+ years' experience in a head chef or managerial kitchen position
  • ServSafe certification
  • Vast knowledge in culinary arts, including any new up and coming food trends
  • Knowledgeable and dexterous using all manner of complex kitchen equipment
  • Effective and clear communicator
  • Expert skills and experience planning, time management and organization
  • Proficiency using Microsoft Suite to monitor and track inventory
  • Creative abilities inside the kitchen
  • Expert problem solver who thrives under pressure
  • Top of the line customer services skills

*Total Compensation Range: Includes Base + Bonus Potential + Benefit Package.
